Potatoes are the ultimate comfort food. Along with fluffy roasted potatoes and creamy mash, there's nothing quite like digging into a big pile of crispy potato wedges. When cooked correctly, they're fluffy in the middle, crisp outside, and seasoned to perfection - that's where this recipe for air fryer potato wedges comes in!
With just a handful of inexpensive pantry ingredients, you can prepare delicious air-fried potato wedges with minimal oil and effort. They taste 5x better than any store-bought option, are crispier than baked versions, and far healthier than deep-fried ones. It's the best of both worlds.
Even better, I've included several options for seasoned potato wedges to adapt to your meal (and mood!), including my favorite simple wedges seasoning that's savory, smoky, slightly spicy, and pairs well with practically any meal!
They're also fairly diet-friendly. Including dairy-free, gluten-free, vegan, and can be paleo and Whole30 when using olive oil or avocado oil. Plus, the recipe is so simple! Just chop the spuds into wedges, toss them with the spices and oil (just a fraction needed for deep frying!), and air fry them until crispy.
Not only are they crispier than baked versions, but they take less time, so you can enjoy your air-fried potato wedges as soon as possible! Honestly, I love turning to my air fryer to cook delicious potato sides, including this air fryer baked potato wedges, Hasselback potatoes, tater tots, and hash brown patties!
The Ingredients
You only need three elements when preparing this homemade potato wedges recipe - potatoes, oil, and seasonings. I've also used potato starch for even crispier air fryer wedges.
- Potatoes: I recommend using russet potatoes that are similar in size (to make even-sized potato wedges). However, Yukon Gold potatoes will also work.
- Oil: Use any neutral-flavored cooking oil like vegetable oil, avocado oil, or light olive oil.
Don't use a non-stick cooking spray in your air fryer, as it can wear away the non-stick coating in the basket.
- Spices: I used a really simple combination of sea salt, garlic powder, smoked paprika, and chili powder for savory, smoky, slightly spicy seasoned potato wedges.
Optionally add dried oregano and thyme for a more herby flavor or add cumin for a 'warmer' flavor.
- Potato starch: While technically optional, adding potato starch will help make super crispy potato wedges.

You can really get creative with making different seasoned potato wedges. Here are just a few options I love.
- Nutritional yeast: Will add 'cheesiness', like a vegan parmesan cheese alternative.
- Fresh parsley: To sprinkle over the air-fried potato wedges as a garnish.

How to Make Potato Wedges In An Air Fryer?
This air fryer potato wedges recipe requires just a few simple, fuss-free, low-mess steps.
- 1) First, wash, dry, and cut the potatoes into wedges on a cutting board with a sharp knife. To do so, chop each potato in half lengthwise twice, so there are four large wedges. Then flip over those potato quarters and slice them down the middle into smaller wedges of your desired thickness (I like around ½-inch wedges).
I also cut mine in half width-wise to better fit my air fryer. However, this isn't always necessary, depending on the length of the potatoes.
- 2) Transfer the potato wedges to a large bowl with the oil, starch, and seasonings, and toss everything to coat the wedges well.
- 3) Place the wedges in a single layer in your air fryer basket, with space between.

If you can't fit all the wedges in a single layer in your air fryer basket, you'll need to cook them in two batches. You can reheat earlier batches in the air fryer for another minute or two at the end if preferred.
- 4) Air fry for around 15 minutes (or until golden-brown and crispy), shaking the basket every 5 minutes.
The exact time they take to cook will depend on how thick your homemade potato wedges are. I recommend monitoring the wedge fries from 10 minutes onward.
What To Serve With Crispy Potato Wedges?

Prepare the homemade wedges according to the recipe and spread them across a large parchment-lined baking tray (or two) in a single layer, with some space between. Then bake the potato wedges in a preheated oven at 425F/220C for 20-35 minutes, flipping them halfway.
The exact time they take will depend on how thickly you've sliced the homemade potato wedges. I recommend checking on them at 20 minutes and every few minutes afterward.
When cooking potato wedges in an air fryer, the biggest issue is not giving them enough space for the air to flow around the pieces and make them crispy. If the potatoes are too closely packed, they will steam and be limp/soggy. Otherwise, they may be undercooked, so test a couple and return them to the air fryer if needed.
I prefer leaving the skins on my homemade potato wedges for extra fiber, nutrients, and structure (they crisp up the most), but you can peel them if preferred.

Russet potatoes are best for crispy potato wedges and an incredible inner texture in minimal time. However, you can also use other types of potatoes like Yukon Gold (my 2nd option for the best results), yellow potatoes, and red potatoes. Just note that these won't become as crispy, and the middle tends to be waxier (rather than fluffy). They also take slightly longer to cook.
Top Tips for Crispy Air Fried Potato Wedges
- Don't overcrowd the tray: The hot air should be able to flow around every wedge to avoid soggy, limp air-fried wedges.
- Chop even-sized wedges: Different sizes will lead to uneven cooking, with some ending up undercooked and some burnt. Therefore, aim for pieces that are as even-sized as possible.
- For extra crispy wedges: If you have the time, soak the potato in cold water for 30 minutes, then thoroughly dry with a kitchen towel before you season and air fry the potato wedges.
- Use oil: When you air fry potato wedges, you can get away with using a tiny fraction of the oil needed for deep-frying. However, for the crispiest results, you still need a small amount. To reduce it further, use an oil spray to lightly coat the wedges before air frying them.
- Air fryer time will vary: Based on the size and thickness of the homemade potato wedges, the batch size, and the air fryer model. Keep an eye on them the first time following this recipe.
How To Prep, Store, and Reheat?
Make ahead: The chopped potato wedges will store well in a water-filled container for several hours or overnight.
As a bonus, this step removes excess starch from the potatoes and makes for even crispier, healthy potato wedges.
You could also par-bake (or, in this case, air fry) the air fryer wedges (for 10-15 minutes at 425F) before freezing them for up to 3 months. Then cook them from frozen until fully cooked and crispy. No need to thaw them first.
Store: Air-fried potato wedges have the best texture directly from the air fryer while still warm. However, if you have any, leftovers will store in an airtight container in the fridge for 2-3 days.
Freeze: Allow the air fryer potato wedges to cool and then flash freeze them (not touching) until solid. Transfer to a Ziplock/Stasher bag, remove the excess air, and store for up to 3 months.
Reheat: Pop the air-fried potato wedges back in the air fryer for between 3-5 minutes, or until warm and crispy (longer from frozen). Don't reheat wedges or fries in a microwave if you want to avoid soggy results.
