In a large bowl, toss all the ingredients together until potatoes are evenly coated.
Place the wedges in a single layer in the basket of the air fryer and cook for 15 minutes at 400 degrees F. Shake the basket every 5 minutes.

Don't overcrowd the tray: The hot air should be able to flow around every wedge to avoid soggy, limp air-fried wedges. You might need to do two batches if you can’t fit them all in a single layer.
Chop even-sized wedges: Different sizes will lead to uneven cooking, with some ending up undercooked and some burnt. Therefore, aim for pieces that are as even-sized as possible.
For extra crispy wedges: If you have the time, soak the potato in cold water for 30 minutes, then thoroughly dry with a kitchen towel before you season and air fry the potato wedges.
