Fresh fruit popsicles are one of my go-to summer treats. They're super tasty, packed with flavor, and usually much healthier than store-bought versions. I've already shared watermelon popsicles, but now it's the turn of these simple vegan strawberry yogurt popsicles (strawberry ice lollies)!
These homemade strawberry popsicles are sweet, slightly tangy, surprisingly nutritious, and simple to prepare. They require just a few minutes of prep before 6-8 hours of freezing time. Plus, the entire family will love these child-approved strawberry fruit popsicles.
Even better, they require just 2 ingredients, but there are plenty of ways to play around with the flavor and dietary requirements (including sugar-free, yogurt-free, multi-fruit, etc.). Keep reading for my favorite options.

The Ingredients
This creamy strawberry popsicles recipe requires just TWO simple ingredients at its simplest!
- Strawberries: Use fresh strawberries and plenty of them. Berries in-season will be tastier and sweeter.
- Vegan yogurt: I recommend using vegan vanilla yogurt that's pre-sweetened and flavored.
Alternatively, you can use plain dairy-free yogurt and add a few drops of vanilla extract and sweeten with maple syrup/agave (or another liquid sweetener, including a sugar-free one), to taste.
What Else Could I Add or Change?
Play around with this homemade strawberry popsicles recipe with any of the following.
- Strawberry compote/jam/syrup: Swirl a bit into the vegan strawberry yogurt mixture for bursts of extra flavor and sweetness throughout the creamy popsicles. Use a low-sugar/sugar-free option if preferred.
- Salt: A pinch of salt will bring out the strawberries' sweetness.
- Freeze-dried strawberry powder: Add a small amount (about a tablespoon) to the strawberry ice lollies for boosted strawberry flavor.
- Rosewater: A few drops in the strawberry popsicle mixture tastes delightful.
- Vegan strawberry shortcake popsicles: Use vegan shortbread cookies or other vanilla cookies combined with freeze-dried strawberries and process into a fine crumb. After freezing the strawberry yogurt popsicles, allow them to sit at room temperature for 10 (or so) minutes until slightly soft on the outside, and then roll them in the shortbread coating. Next, place them on a parchment paper-lined baking tray and freeze again for 30 minutes—voila!
- Vegan strawberry cheesecake popsicles: Combine dairy-free cream cheese into the vegan yogurt (in a 1:1 ratio) and stir in ½-1 cup of graham cracker crumbs. Create layers, swirl the strawberry into the vegan 'cheesecake' part, or blend them thoroughly.
- Without vegan yogurt: You can easily make simple strawberry popsicles with just strawberries, citrus juice (orange, lime, or lemon juice—1-2tbsp), and a liquid sweetener added to taste.
When you make strawberry popsicles without vegan yogurt, you can also add fresh herbs like mint or basil.
- Strawberry banana popsicles: Swap out most or all of the dairy-free yogurt for banana puree instead (1:1 ratio of strawberries to banana blended together) and sweeten (to taste) with liquid sweetener if needed.

How to Make Strawberry Popsicles?
Prepare these homemade vegan strawberry yogurt popsicles in just four simple steps.
- 1) First, rinse and chop the strawberries, removing the stems.
- 2) Then, transfer the berries to your blender/food processor and blend until smooth.
Give it a taste once blended and add some liquid sweetener if preferred.
- In clean, dry popsicle molds, spoon in a heaping tablespoon of the vegan yogurt followed by the strawberry puree, and repeat, alternating the two until the popsicle molds are full of layered strawberry and yogurt mixtures.
Alternatively, you can add the vegan yogurt to the blender and create blended, creamy strawberry yogurt popsicles.
- Insert the popsicle sticks, then transfer them to the freezer to set until fully frozen (6-8 hours at least. I usually leave mine overnight).
If you have any issues de-molding them, run the mold under warm water for a few seconds or allow them to sit at room temperature for a few minutes. Enjoy!
