Sparkling Pineapple Strawberry Mocktail

This 10-minute non-alcoholic pineapple and strawberry mocktail (made with fresh fruit!) is a fruity, refreshing, and delicious low-calorie, low-sugar drink for hot summer days and entertaining!

Fresh Pineapple Strawberry Mocktail with Mint

On the back of a couple of very isolated years, it’s summer once more, and everyone is finally able to get back to entertaining family and guests. Which means it’s the perfect time to dig out the mocktail recipes like this pineapple and strawberry mocktail.

This strawberry pineapple juice mocktail is naturally sweet, refreshing, fruity, and perfect for cooling down on warm summer days and impressing non-alcoholic drinkers (adults and kids included) at parties, baby showers, cookouts, the holidays, and special events! Plus, it requires little effort, no special skills, and just a blender to prepare.

Even better, by using fresh fruit (with no added sugar), this pineapple strawberry drink is also surprisingly nutritional and diet-friendly. All you need are strawberries, pineapple (or pineapple juice), water, sparkling water (or lemonade), and optional mint. Plus, there are several ways to adapt and add to this fruity non-alcoholic drink to find the perfect flavor for you!

The Mocktail Ingredients

You can make this refreshing and delicious pineapple and strawberry mocktail with just 3 ingredients.

  • Strawberries: Use ripe and in-season fresh strawberries for the sweetest flavor. Though I haven’t tried, frozen (and thawed) should also work.
  • Pineapple: I prefer to use fresh pineapple for the most refreshing pineapple mocktail. However, canned pineapple chunks in juice should also work, or frozen (and thawed) pineapple pieces.
  • Water: You’ll need a combination of still water and sparkling water (or soda water/ club soda, or lemonade like Sprite/7 Up) for this strawberry and pineapple juice mocktail recipe.

For a non-sparkling strawberry pineapple mocktail, you could use coconut water to top off the drink for extra summery flavor and refreshing-ness.

  • Fresh mint leaves: (optional) To garnish the drink. Basil or rosemary also work.
  • Ice: (optional) To serve. Alternatively, to avoid watering down the drink, add some frozen fruit to the glasses.

What can I add to the Strawberry Mocktail?

  • Sweetener: (optional) If the fruit isn’t very ripe/ sweet, you could add some maple syrup, agave nectar, or another liquid sweetener (including a sugar-free syrup) to taste. Grenadine syrup would also work for flavor and color.
  • Lemon or Lime juice: Serve the strawberry mocktail with a wedge of fresh lime or lemon to squeeze into the drink for a brightened ‘strawberry pineapple lemonade’ flavor without added sugars.
  • Rose: A little rose water or rose syrup tastes fantastic with the strawberry pineapple juice combination.
  • Ginger: A tiny amount of fresh ginger root will infuse the strawberry pineapple juice mocktail and add a subtle heat. Alternatively, you could swap the sparkling water with ginger ale for a delicious strawberry and pineapple Moscow mule mocktail.
  • Vegan sherbet: Adding a scoop of vegan sherbet (strawberry, lime, etc.) to each glass of strawberry lemonade mocktail makes for a fun presentation at parties (as it fizzes and foams) and a treat for kids.
  • Other fruits: Several fruits will pair with this strawberry pineapple juice for extra flavor.
    • Mango
    • Raspberry
    • Peach
    • Orange (blood orange also works very well)

How to Make Pineapple Strawberry Mocktails?

  • 1) First, wash the strawberries well and pull off the green stem, and peel and chop the pineapple.

  • 2) Transfer the strawberries, pineapple, water, and optionally mint to a blender and process until smooth.

  • 3) Divide the mixture between two glasses (optionally with ice) and top up each with half a can of sparkling water (or lemonade). Stir gently, and enjoy!

You can optionally garnish the glasses with a slice of lemon/lime, a wedge of pineapple, or a strawberry.

FAQs

Could I use a juicer?

We’re not using a ton of fruit for this pineapple and strawberry mocktail recipe, so I tend to think it’s not worth pulling out a juicer. However, yes, it is possible to use one. Simply feed the strawberries, then the pineapple through the machine, and let it do all the work.

Can I use pineapple juice?

Feel free to use pre-made juice instead of fresh pineapple chunks. Technically, you can do the same with strawberry juice, though that’s harder to find in grocery stores. Instead, I like to make my own strawberry juice and store it in the freezer.

How much do I need to serve a large group?

You can increase the recipe based on how many individual glasses you want. Alternatively, transform this strawberry pineapple juice into a punch and aim for about 1 gallon of drink per 10 people.

Could I use a hand blender?

Yes, but the resulting juice won’t be as smooth. It works great to muddle all the ingredients, though, and can even be done directly in each individual glass if the rim is wide enough.

Do I need a blender?

If you have something (like a wooden spoon or muddler) you can use to muddle (crush) the fruit with the mint, then you can use that instead, though it will take longer to mash the fruit into a pulp, and it won’t be as smooth. Only add the mint at the end and gently muddle it to release the flavor into the fruit without tearing apart the delicate leaves.

There’s no need to use any plain water for this version of this non-alcoholic drink, as you can top up the pulp entirely with sparkling water/ lemonade.

Top Recipe Tips and Notes

  • Adjust the sweetness: Taste it after blending or when fully assembled into the strawberry mocktail with pineapple juice. Add sweetener to taste.  
  • Adjust the consistency: You can leave the pineapple strawberry mixture pulpy or strain some or all of the pineapple and berry pulp/seeds.
  • To avoid diluting the drink: Use frozen fruits in place of the ice or even freeze some of the strawberry pineapple juice in advance and use them. That way, the flavor will only get stronger as it sits (and could be topped up with more sparkling water).
  • To make a large punch bowl: Use strawberry and pineapple juice (I love a blend of pineapple, strawberry, and orange when making a large pineapple punch) and add the fresh fruit and herbs into the punch bowl. Only add the sparkling water right before serving, so it doesn’t lose its fizz too soon.
  • To create a slushy: Use frozen fruit instead of fresh.

Storage Instructions

Fridge: Because of the sparkling water, I recommend enjoying these pineapple and strawberry mocktails immediately. However, if you have leftover strawberry pineapple juice (minus the sparkling water), it will store in the fridge for 2-3 days.

Freezer: You can freeze the base strawberry pineapple juice into ice cubes and pop a few into a glass of lemonade/sparkling water as needed OR allow them to thaw first and create delicious mocktails.  

You can also blend the ice cubes with a small amount of liquid, then top it up with sparking water/lemonade for a summery strawberry pineapple lemonade slushy.

Ingredients
  

  • ¼ cup of strawberries
  • ¼ cup of pineapple chunks
  • ¼ cup of water
  • Sprig of mint
  • 2 tall glasses filled with ice
  • 1 can of any flavor of sparkling water
  • Mint for garnish optional

Instructions
 

  • Puree the strawberries, pineapple, water, and mint in a blender until smooth.
  • Pour half of the strawberry mixture and half of a can of sparkling water over each of the glasses filled with ice.
