Quick Versatile Smashed Avocado Hashbrown Toast
As much as I love bread, if I could swap it for hashbrowns at any opportunity, I would. Their flavor is subtle but delicious, they’re tender in the middle and crisp outside, salty, and they make for surprisingly amazing hashbrown toast with smashed avocado (and probably why I love avocado-topped potato tot nachos)!
While this hashbrown avocado toast may not get to the table quite as quickly as regular avocado toast, it’s just as simple to prepare with minimal hands-on prep and TONS of versatility. Keep reading for a simple base ‘smashed avocado’ topping with my current favorite garnishes, along with a long list of optional toppings, so you’ll never get bored.
Honestly, this TikTok-inspired hashbrown avocado toast really takes avocado toast to the next level while remaining low-cost and simple to prepare. Plus, when using air fryer hashbrowns, this avocado breakfast takes under 15 minutes to prepare.
You can use regular hashbrowns, sweet potato hashbrowns, or even low-carb cauliflower hashbrowns, too. Just prepare the toppings while the hashbrowns cook, then simply assemble, season, and garnish for a delicious vegan avocado breakfast!
The Ingredients
At its most basic, this hashbrown avocado toast requires just 2 ingredients, plus salt and pepper.
- Hashbrowns: I use frozen hash brown patties (Ore-Ida and Trader Joe’s are my favorites). Regular potato, sweet potato, or cauliflower hashbrowns (low carb) will work.
- Avocado: I used a ripe avocado to make a simple smashed avocado topping. Guacamole would also work.
If you want a slightly elevated smashed avocado, I recommend adding a squeeze of lime, salt, pepper, and red pepper flakes.
- Garnishes: There are plenty of ways to garnish the hashbrown avocado toast. My current favorites include sprouts/microgreens, minced onion (regular or red onion), and diced tomatoes (or halved cherry tomatoes). I also sprinkle it with freshly ground pepper and a pinch of salt.
What Else Could I Add?
Like traditional avocado toast, there are plenty of optional toppings. Here are a few of my favorites that pair with this simple vegan hashbrown toast (so no eggs!).
To Add To The Smashed Avocado
- Red pepper flakes: Add a hint (or more) of spice to the smashed avocado toast. You could also use hot sauce.
- Everything bagel seasoning: For some texture and subtle flavor. Added to or over the avocado.
- Fresh herbs: Like cilantro leaves, fresh chives, or green onions. Mix them into the smashed avocado or sprinkle them over the top.
- Paprika: To mix into or sprinkle over the smashed avocado.
- Garlic: Mix fresh or garlic powder into the smashed avocado to taste.
Hashbrown Avocado Toast Toppings
- Sweet chili sauce: Add to taste.
- Hot sauce: For some heat, to taste.
- Pickled onions: Particularly pickled pink onion for a tangy crunch and color.
- Vegan bacon: Store-bought or a homemade alternative to add extra salty, savory depth to this hashbrown breakfast idea.
- Vegan cream cheese: Spread a layer of dairy-free cream cheese directly over the hashbrown toast for subtle creaminess.
- Corn: I prefer it charred, but canned will work too.
- Vegan feta: For little bursts of salty tanginess. Pairs well with the corn (like elote avocado toast) and many other hashbrown toast toppings.
- Pesto: To spread beneath the smashed avocado topping.
- Mushrooms: Sautéed until brown and lightly crisp.
- Asparagus: Add a few spears of asparagus to each avocado and potato stack for extra nutrients and flavor.
How to Make Avocado Hashbrown Toast?
- 1) First, prepare the hashbrowns in the oven (following the package directions) or an air fryer.
- 2) Meanwhile, in a small bowl, mash the avocado with a fork and prepare all your favorite garnishes.
Optionally add some lemon or lime juice to keep it green for longer, and add tang. You could also season this with salt and black pepper rather than sprinkling it over the top of the hashbrown toast.
- 3) Spread half of the avocado mash over each hashbrown, top it with the garnishes, and enjoy!
Enjoy the avocado and potato hashbrown toasts alone or serve with a side of scrambled tofu for a quick and easy avocado breakfast!
FAQs
Frozen hashbrowns are best when warm straight from the oven/air fryer. Likewise, smashed avocado will brown quickly unless plenty of lemon or lime juice is added. Therefore, this is best as a ‘make as needed’ avocado breakfast recipe.
However, if you have any leftovers, they will keep for a day or two in airtight containers in the refrigerator. Just ensure you add plenty of lime juice to the avocado to keep it green.
The best trick I’ve found is to check under the stem. If it’s green or just slightly brown and the fruit has a gentle give when squeezed, it should be fine. If it’s brown and feels very soft, it’s likely gone bad. If the stem doesn’t easily lift up or is a very pale color and feels firm, it needs to ripen further.
