For the sake of egg-free/vegan diets everywhere, I’m happy to say that not only is it possible to learn how to make French toast without eggs, but it’s incredibly simple to do so, and with this Just Egg French toast recipe, no-one can even tell the difference!
For years I've used plant-based milk and/or banana-based recipes for French toast without eggs, but they lack the certain 'custardy-ness' of eggs. I was blown away by the results of making vegan French toast with Just Egg (pre-mixed egg substitute), though, and HAD to share.
Not only does it taste like the original, but it requires only two ingredient swaps to create this easy, pantry-friendly 7-ingredient vegan French toast recipe, no special tools (just a large, shallow dish, a skillet, and a spatula), and is ready in under 15 minutes.
Just mix up the ‘egg’ custard, dip the bread, then pan-fry it until it’s golden brown and crispy outside and slightly custardy in the middle. Top the toast off with your favorite toppings (like fresh berries and maple syrup) or refrigerate/freeze them to reheat throughout the week.
The Ingredients
You’ll need just 7 pantry-friendly ingredients to prepare this eggless French toast recipe.
- Bread: It’s best to use day-old (slightly stale) thick bread - between ½-¾ inch thick. Vegan brioche will make sweeter, tender, fluffy eggless French toast. Alternatively, use something sturdier like Sourdough (which provides a subtle tang) or French bread. Experiment to find your preferred option.
- Just Egg: This vegan egg substitute provides a creamy, custard-like consistency/flavor similar to real eggs for delicious vegan French toast. It’s available in most major supermarkets in the fridge section.
- Plant-based milk: For the richest results, I actually recommend using a dairy-free creamer, but any dairy-free milk will work (almond, oat, soy, etc.).
- Vanilla extract: Use natural vanilla to avoid an artificial aftertaste.
- Cinnamon: Just a pinch (or perhaps pumpkin pie spice) tastes delicious in this Just Egg French toast recipe. Omit it if preferred, though.
- Salt: Just a little to enhance the flavors in this eggless French toast recipe.
- Vegan butter: Use unsalted vegan butter for cooking the French toast. Coconut oil would also work, but leaves a subtle coconut flavor.
For even sweeter easy vegan French toast, add a small amount of granulated sugar or maple syrup to the vegan egg custard mixture, too.

- Vegan caramel or chocolate syrup/sauce
- Coconut whipped cream
- Dairy-free yogurt and some granola
- A scoop of vegan vanilla ice cream
- Dairy-free chocolate chips
- Shredded coconut/coconut flakes
- Chopped nuts (walnuts, pecans, pistachios, etc.) OR nut butter
- Vegan bacon or sausage
How to Make Just Egg French Toast
- 1) First, whisk the Just Egg, plant-based milk, vanilla, cinnamon, and salt in a deep, wide plate/bowl/dish.
- 2) Then, add about a teaspoon of vegan butter to a large non-stick skillet and melt it over medium-high heat.
- 3) Once hot, quickly dip the bread in the Just Egg mixture for just 1-2 seconds per side, then transfer it to the pan.

- 4) Cook the vegan French toast for 2-3 minutes per side until golden brown and slightly crispy.
- 5) Repeat with the remaining bread and Just Egg mixture, adding more vegan butter between each one. Finally, serve the no-egg French toast while warm with your favorite toppings. I used fresh fruit, plenty of maple syrup, and a little dusting of powdered sugar to finish – delicious!
If you’re making a large batch, you could keep the cooked vegan French toast warm in a preheated oven at 200F/95C.
FAQs
This may be because you’ve over-soaked it, the ingredient ratio is off (i.e., too much plant-based milk in the custard), the bread is too thin, or you’ve not cooked it long enough.
Just 1 second per side will absorb liquid without becoming mushy. Depending on the thickness and sturdiness of the bread, they can withstand a few more seconds to achieve deeper penetration for a creamier interior (without becoming soggy).
Just Egg is a plant-based egg alternative made from mung beans that comes in liquid form, ready to replace eggs in recipes like quiches, frittatas, pancakes, and French toast. You can find it in most major grocery stores, Whole Foods, and other health food stores.
Generally, 3-4 tablespoons of Just Egg = 1 medium to large chicken egg.
Top Recipe Tips and Notes
- Make sure the bread is thick enough: Between ½-¾ inch is ideal. If it’s too thin, it will fall apart in the vegan egg mixture. If you only have medium slices, I recommend lightly toasting it first, then following the recipe.
- Don’t over-dip: Thick, super sturdy bread can handle 5-8 seconds per side, but softer or thinner slices work best with just 1 second per side to avoid becoming soggy/falling apart.
- Preheat the pan: Otherwise, the bread soaks up the fat and becomes soggy.
- For stuffed French toast: Use a thick piece of bread and slice a pocket into it before stuffing it with a piece or two of vegan chocolate.
Storage Instructions
Store: Allow the French toast to cool, and store the slices in an airtight container with parchment paper between the layers (to avoid sticking) for 3-5 days.
Freeze: Either flash freeze the slices first or stack them with parchment paper in between and transfer them to a Ziplock/Stasher for up to 2 months. To thaw it, allow it to sit in the refrigerator overnight.
How To Reheat French Toast?
Depending on the method, you can reheat the Just Egg French toast from frozen or thawed.
- A Skillet: Add a small amount of vegan butter/oil to a pan and reheat over medium heat until warm and slightly crispy (1-2 minutes per side). Don’t use frozen slices for this method.
- The Oven: Reheat from frozen or thawed at 375F/190C for 3-5 minutes per side (or until warm and slightly crispy). Make sure there's space between.
- A Toaster/Toaster oven: This works best on thawed/ ‘sturdy’ pieces of the eggless French toast. Just pop it into the toaster on a medium-low setting (adjust the setting to your desired crispiness).
- A Microwave: From frozen or chilled – in 10-15 second increments. It won’t be crispy, but it still tastes great.
