Why You'll Love This Recipe
Usually, I dig out my Instant Pot to cook 'low and slow' recipes (like Instant Pot vegetable barley soup or this easy vegan taco soup) in a fraction of the time without flavor loss. In this case, though, cooking sweet potatoes in an Instant Pot is my favorite method for fluffy sweet potatoes (or for making Instant Pot garlic mashed potatoes) with no hands-on effort or messy clean-up.
Simply scrub the potatoes, place them in the water-filled pot, set the timer, and let the Instant Pot do all the work. Pressure cooker sweet potatoes will end up perfectly steamed every time, and the method is great for meal prep.

How to Cook Sweet Potatoes in an Instant Pot

Step 1: Pierce each sweet potato 4 to 5 times with a fork.
Step 2: Pour the water into the Instant Pot and place the metal trivet inside. Cook on High Pressure for 13 minutes for medium sweet potatoes.
Adjust cooking time based on the sweet potato's size. Small sweet potatoes (palm-sized) = 11-12 minutes. Very large sweet potatoes = 18-20 minutes.

Step 3: Allow it to naturally release pressure for 10 minutes, then carefully perform a quick release. Remove the lid and check for doneness by inserting a fork into the center of a potato. If it's not tender, cook on High Pressure for 2 -3 more minutes. Serve the pressure-cooked sweet potatoes whole or slice open and add toppings.
FAQs
That would require a 2-step cooking process. First, pressure cook them until perfectly fluffy and tender, then pat dry, lightly oil, and broil for 3-5 minutes (or air fry for 5-8 minutes/roast for 10-15 minutes at 425°F/220°C). Monitor closely to avoid burn. Looking for crispy sweet potatoes? Try out this crispy roasted sweet potato wedges recipe.
Absolutely. Simply cook, cut in half, scoop out the flesh, and mash while warm.
I don't recommend it. Unpeeled potatoes will be ultra-moist without becoming soggy or falling apart.
Pro Recipe Tips
- Use similar sized potatoes: To ensure they cook in the same timeframe.
- Use a trivet: The potatoes shouldn't be touching the water to avoid sogginess.
- Don't overcrowd: This method is great for meal prep, but avoid overfilling the pot or the steam won't evenly circulate. Stack loosely.
- Adjust the cooking time: Note, it will change based on the size of the potatoes.

Storage Recommendations
Store: Leave to cool, then store in an airtight container in the refrigerator for up to 4 days.
Freeze: Wrapped and placed in a Ziplock/Stasher for up to 3 months. Then, thaw in the refrigerator overnight.
