    These one-bowl, 30-minute, and easy Vegan Strawberry Cupcakes are the perfect treats to welcome the spring season! This recipe is so simple to make yet turns out irresistibly delicious - it's one of the best ways to enjoy these juicy, sweet-tart berries.

    What You’ll Need

    Once you have the fresh strawberries, the rest of the ingredients are most likely in your pantry already. Here's a list of what you need to make them and possible substitutions too.

    • Berry People’s fresh strawberries - I like dicing them in small pieces to give the plant-based cupcakes a nice texture. You can also puree half of it if you prefer.
    • Flour - You can use all-purpose flour or whole wheat flour to make crumbly but moist vegan cupcakes.
    • Granulated sugar - Or brown sugar for a deeper caramel flavor.  
    • Baking soda - This will give the vegan cupcakes a lift and make them softer and fluffier!
    • Salt
    • Vanilla extract - For a pleasant floral taste and smell. Yum!
    • Vinegar - Is needed to activate the baking powder. You can use white or apple cider vinegar for this recipe.
    • Oil - To make the vegan cupcakes super moist for days even after storing them in the fridge. You can use any neutral-tasting oil like canola or vegetable oil.
    • Water

    How to Make Vegan Strawberry Cupcakes

    This may be one of the easiest cupcake recipes you can ever make! You’ll ace it on your first try for sure! Here’s what you need to do:

    Preparations:

    • Preheat the oven to 350 degrees.
    • Line two cupcake tins with silicone or paper baking cups.
    • De-core the Berry People’s strawberries and dice them into small pieces.

    Steps:

    • 1) Make the batter. In the bowl of an electric mixer (or in a large bowl using a handheld electric mixer), mix together all the ingredients until you have a smooth batter.

    • 2) Add the diced strawberries. Add in the strawberries and gently fold them into the batter until combined.

    • 3) Bake! Pour the batter into each baking cup until it’s three-quarters full. Bake for 25 to 30 minutes or until an inserted toothpick comes out clean. That’s it! Easy peasy!

    Expert Tips for You!

    • If your strawberries are too juicy, remove some of the liquid before adding them to the batter to keep the cupcakes from becoming dense and soggy.
    • Do not overmix the batter. This is important when making baked goods. Overmixed batter will result in a dry and tough cupcake. Mix only until everything is just combined.
    • Do not fill the cupcake molds to the top. Just pour the batter ¾ of the way through to give it space to rise without spilling over.
    • If you'd like to add a bright pink color to the strawberry cupcakes, you can add drops of beetroot powder or any plant-based red food dye.

    Storing Notes

    You can keep the vegan strawberry cupcakes at room temperature for up to three days or store them in the fridge for up to five days. These are also freezer-friendly so you can make a big batch to enjoy later. All you have to do is thaw them in the fridge overnight and gently reheat them.
