A lot just prefer to order, because while homemade pizzas are awesome, making the dough from scratch can take time and a bit of elbow grease.

Quick and Easy Mini Flatbread Vegan Pizza Recipe
Luckily, we found out that using Rhodes White Dinner Rolls is the perfect solution for this! All you have to do is to thaw and then flatten them and you instantly have mini pizza crusts with a lovely home-baked flavor! These rolls are vegan, non-GMO, and preservative-free too. So not only will you be getting quality yeasted pizza dough, but you will also end up with a golden crunchy crust that is absolutely delicious! Top them with your choice of vegan cheese and veggies, bake, and enjoy!
Keeping a pack or two of Rhode’s frozen yeast dough are so convenient, all you have to do is thaw, rise, and bake - no kneading or proofing needed. I used them to make Garlic Herb Dinner Rolls for Easter and they were amazing!
Ingredients You’ll Need

- Rhodes White Dinner Rolls - Follow the instructions for thawing before use. If you do not know where to buy these, check their online store locator to see the nearest store to grab them.
- Tomato sauce - You can also use marinara sauce or any type of sauce base you like.
- Vegan mozzarella - There is nothing better than stringy melted dairy-free cheese on pizza!
- Vegetables - I used black olives, mushrooms, shallots, spinach, broccoli florets, and basil as toppings for this recipe. However, feel free to use other vegetables and herbs such as bell peppers, roasted cherry tomatoes, artichoke hearts, oregano, arugula, zucchini, Brussels sprouts, eggplant, and asparagus.
- Olive oil – This is optional but drizzling it on top of the toppings will give them a more roasted finish.
- Crushed red pepper flakes - Another optional ingredient for those who like their vegan pizza with a kick of heat! You can also use jalapeno rounds or hot sauce instead.
Other Topping Options
- Use vegan meats and delis like plant-based pepperoni, ham, bacon, sausages, jackfruit, or bean burger patty crumbles.
- Make it Hawaiian-style by adding chunks of pineapples. You can also make one topped entirely with fruits for a refreshing breakfast or dessert.
- Different types of dairy-free cheese like feta, cheddar, and parmesan.

How to Make Flatbread Mini Pizzas
- 1) Thaw the rolls according to package instructions.


- 2) Preheat the oven to 350 F. and prep a sheet pan with parchment paper.

- 4) Add toppings and plant-based cheese.



- 5) Bake for 20-25 minutes or until browned around the edges and bottom of the pizza.
- 6) Remove pizzas from the oven, drizzle with olive oil and sprinkle crushed red pepper flakes if using.

Tips when Making Flatbread Mini Pizzas
- Make sure to follow the instructions for thawing the Rhode’s dinner rolls. They have to be at room temperature so you can roll and flatten them evenly.
- Use a floured surface when rolling the yeasted dough so it does not stick. Use a rolling pin or any cylindrical object you have.
- Do not flatten the dough too thinly or the pizza sauce might seep out from under and make it soggy.
- Spread the pizza sauce evenly on top of the flattened bread rolls to make sure there are no dry patches or overly sauced surfaces.
- Don’t get overly excited and overload the flatbread pizza with too much toppings! This might cause the crust not to bake fully.

Serving and Storing Notes
These Vegan Flatbread Mini Pizzas are best served right off the oven while the crust is crunchy and the vegan cheese is all gooey!
You can assemble the vegan pizza ahead of time and refrigerate them overnight so you can just pop them in the oven later on. Leftover dairy-free mini pizzas can be stored in the fridge for up to 3 days. Just reheat them in the oven before serving again.
