Step 1: First, optionally peel, then cut the sweet potatoes into wedges. Also, preheat the air fryer to 400°F/200°C. Toss them in a bowl with the oil, starch, and seasonings until evenly coated.
Step 2: Spread the wedges in a single layer in the air fryer basket, with a little space between (for airflow). Cook in batches if needed.
To cut potato wedges: Cut the potato in half lengthwise, then cut at an angle towards the center every ¼ inch apart, or as thick as you like. Alternatively, cut the halves in half another 2 times for 8 wedges.

Step 3: Air fry for 18-20 minutes, shaking every 5 minutes for even crispiness. When ready, they're tender inside with golden, crisp edges. Remove and serve immediately. Enjoy!

Reheat: Air fry the sweet potato wedges at 375°F/190°C for 6-10 minutes, shaking halfway. Avoid the microwave, as it will turn them limp.
