Instructions
Peel the sweet potatoes if desired, then cut them into wedges.
In a large mixing bowl, toss the sweet potato wedges with the oil, potato starch, salt, chili powder, paprika, and garlic powder until evenly coated.
Preheat the air fryer to 400 degrees Fahrenheit (200 degrees Celsius).
Place the wedges in a single layer in the air fryer basket. Cook for 18–20 minutes, shaking the basket every 5 minutes to ensure even crisping.
Check for doneness. They should be golden and crisp on the outside, tender on the inside.
Remove and serve immediately.
Notes
Depending on the size of your air fryer, you may need to cook the wedges in batches to keep them in a single layer.
Adjust the size
: You can cut thinner fries or thicker wedges and adjust the cooking time accordingly.
Don’t overcrowd
: Spread in a single layer, with space between to ensure airflow, for the crispiest sweet potato wedges. Cook in batches if needed.
If cooking in batches
: Pop earlier batches back in at the end (stacking is fine at this point) for a few minutes to reheat.
