This Just Egg French toast is fluffy, custardy, and slightly crisp, with hints of vanilla and cinnamon – made with just 7 ingredients and 100% vegan (though no one will know!) to enjoy with all your favorite toppings in less than 30 minutes!
In a medium bowl, whisk together the plant-based milk, Just Egg, vanilla, cinnamon, and salt.
Add 1 teaspoon of vegan butter to a nonstick pan and let it melt under medium high heat.
Quickly dip both sides of the bread in the Just Egg mixture. You don’t want to oversaturate the bread.
Put the soaked bread on the greased hot pan and cook until golden brown, 2 to 3 minutes per side.
Serve hot and top with maple syrup, vegan butter, fresh fruit, and powdered sugar if using.
Notes
The thicker the bread the better. If unable to find thick bread, toast the slices of standard-size bread until slightly hardened, then follow the directions. This will help the bread not fall apart if it’s too thin.
Don’t over-dip: Thick, super sturdy bread can handle 5-8 seconds per side, but softer or thinner slices work best with just 1 second per side to avoid becoming soggy/falling apart.
Preheat the pan: Otherwise, the bread soaks up the fat and becomes soggy.
For stuffed French toast: Use a thick piece of bread and slice a pocket into it before stuffing it with a piece or two of vegan chocolate.
