How to make the ultimate vegan BLT sandwich – combining vegan bacon, lettuce, and tomato with mayo for all the satisfying flavor with zero animal products. It’s quick, simple, super adaptable, and perfect for a light lunch!
1packageof tempeh baconor your favorite vegan bacon
1largeslicing tomato,thinly sliced
Salt & pepper
6leavesof romaine or iceberg lettuce
Vegan mayo,to taste
Instructions
Toast the bread and have it ready aside.
Cook the vegan bacon according to package instructions.
While the bacon cooks, lay the tomato slices flat on the cutting board and sprinkle some salt and pepper on them.
Evenly spread the vegan mayo on all 4 bread slices, place 3 leaves of lettuce on two of the slices, then add the tomato slices on top of both lettuces, top with 3 strips of vegan bacon on each sandwich.
Top with the other slices of bread and cut in half.
Notes
Change things up by mixing 4 tablespoons of pesto, sriracha, or chipotle into the vegan mayo.
Don’t overly toast the bread: While it’s not technically necessary to toast the bread (but it is highly recommended), if you do, make sure not to overly toast the bread. Lightly toasted bread will make a sturdier sandwich and add crunch without hurting the roof of your mouth.
To save time: Prepare a big batch of vegan bacon and refrigerate or freeze it for every time you have a vegan BLT craving.
