peanut butter jelly overnight oats
absolutely delicious, but they prep in minutes for a simple, nutritious meal-prep breakfast/snack!

Ingredients

cup
of old-fashioned oats
¾
cup
of plant-based milk
2
tablespoons
of melted peanut butter
2
tablespoons
of raspberry or strawberry preserves
Raspberries or chopped strawberries
for garnish
Crushed peanuts
for garnish
Optional ingredients:
1 to 2
teaspoons
of chia seeds
added in step 1

teaspoon
of agave or maple syrup
added in step 1
Instructions
Add the oats and plant-based milk to a storage container, glass, or mason jar.
Pour on the melted peanut butter. Top with preserves.
Cover with a lid or aluminum foil and refrigerate overnight.
In the morning, mix and enjoy chilled. (No cooking or heating is necessary—the oats soften overnight.) Garnish with fruit and crushed peanuts.
Notes
Firmer vs. softer oats
: Adjust the soaking time. 3-4 hours leave a soupier mix with firmer oats. 8 hours is my ‘tender’ sweet spot.
Adjust liquid as needed
: Oats too thick after soaking? Add more plant milk!
Sweeten to taste
: The peanut butter and berry preserves may be sweet enough, but taste and adjust as needed.
