No-bake peanut butter balls with Rice Krispies, dipped in vegan white chocolate like little snowballs. Just 4 ingredients for an easy Christmas candy tray treat.
Add the peanut butter, powdered sugar and crispy rice cereal to a large bowl and stir until the cereal is completely coated.
Use a small cookie scoop to portion the mixture into about 12 balls and place them on a baking tray lined with parchment paper.
Freeze the balls for about 15 minutes, until firm.
Melt the white chocolate chips in the microwave in 20-second bursts, stirring between each, until smooth.
Dip each frozen ball into the melted white chocolate with a fork or candy dipping tool, let the extra drip off and set it back on the tray.
Freeze for about 15 more minutes, until the coating sets. Store in an airtight container in the fridge.
Notes
If the mixture is too soft to roll, add a little more cereal or powdered sugar, a spoonful at a time.
Any crispy white rice cereal works. For chocolate-coated balls, use semisweet vegan chocolate chips in place of the white chocolate. A spoonful of vegetable shortening or melted coconut oil makes the melted chocolate easier to work with.
