Prep a 9x13 baking dish with parchment paper or oil.
In large pot, melt vegan butter on low heat. Once vegan butter has melted, add the marshmallows and stir constantly.
Once marshmallows begin to slightly melt, add the peanut butter. Continue to vigorously stir until the marshmallows are fully melted and combined with the peanut butter. About 5 minutes.
Once a very thick and sticky mixture is created, add the rice krispies and mix well with a wooden spoon.
Once fully combined, add the mixture to the baking dish. Then, press the mixture until fully compact and evenly distributed in the baking dish.
Allow 1 hour to cool down and solidify. Remove from the baking dish and cut to the desired size.
Notes
For more gooey rice krispie treats: Add 3-4 tablespoons of vegan condensed milk to the plant-based butter mixture and bring to a simmer before continuing the recipe. OR use less rice krispies in the mixture (¼-1/3 cup less), making for softer peanut butter rice krispie bars.
Heat low and stir constantly: Using too-high heat can lead to hard vegan peanut butter rice krispie treats. Meanwhile, stirring will ensure no burning.
If the mallows don’t melt fully: That’s fine. You’ll just have some chunkier pieces of mallow in the peanut butter vegan rice krispie treats.
