¼ cupof brown sugar
½ cupof walnuts or pecanschopped
¼ teaspoonof cinnamon or pumpkin pie spice
¼ teaspoonof salt
Plant-based vanilla ice cream(optional)
Instructions
Preheat a grill or grill pan over medium heat.
In a small bowl, combine the oil and brown sugar.
Generously brush the cut side of each peach half with the oil and sugar mixture.
Place the peaches cut side down on the grill or hot pan. Cook for 2 to 3 minutes, or until grill marks appear and the peaches begin to caramelize.
Remove from the grill and place on a serving plate, cut side up.
In a separate small bowl, combine the chopped walnuts or pecans, cinnamon or pumpkin pie spice, and salt. Sprinkle the mixture over the warm peaches.
Optionally, top with a scoop of plant-based vanilla ice cream and serve immediately.
Notes
Use only ‘just’ ripe peaches: They should be ripe yet firm. That way, they won’t fall apart, and the grilling process caramelizes them to bring out their sweetness.
Preheat the grill: This is important to avoid sticking and cooking the peaches in the necessary time will avoid them from burning or becoming mushy before ready.
Grill undisturbed: This ensures they form nice grill lines. For the best pan-grilled peaches, use a cast-iron grill pan – this produces the most grill-like results.
