Coconut basmati rice is fluffy and tender with the added rich, fragrant, creamy, and slightly sweet flavors of coconut milk for a crowd-pleasing side dish.
Add rice, water, coconut milk, and salt to a medium saucepan with a lid. Mix well, bring to a boil, cover with a lid, and lower the heat to a simmer. Cook undisturbed for 15 minutes. Uncover and if there is still liquid, cover with a lid and cook for 5 more minutes.
Turn off the heat, and let it sit undisturbed for 10 minutes.
Uncover and fluff with a fork and add the green onions.
Serve with a slice of lime and topped with more green onions.

Always rinse the rice: It will remove excess starch to avoid gloopy rice.
Toast the rice for more flavor: Sauté the basmati rice in the saucepan with a little coconut oil until it’s fragrant (1-2 minutes). Then add the remaining ingredients to cook it.
The cooking time may vary: Based on your exact heat level and the size of your saucepan. I recommend monitoring it more than usual when first making the recipe to adjust it if needed.
Don’t skip the steaming step: After cooking the rice, leaving it to steam for a further 10 minutes will allow the rice time to absorb or steam any remaining moisture for perfectly cooked rice.
