In the bowl of a stand mixer (or a large bowl with an electric handheld mixer), beat together the vegan butter and sugar for 1 to 2 minutes. Add the vanilla and flax meal mixture, and mix for another 1 to 2 minutes.

Add the flour, cinnamon, baking soda, baking powder, salt, and old-fashioned oats and mix until combined. Fold in the raisins and walnuts or pecans, if using.

Roll the dough into balls that are 1 ½ inches. Bake for 8 to 10 minutes.
