These fresh layered vegan strawberry yogurt popsicles require just 2 ingredients and are a naturally gluten-free, dairy-free, and vegan summer treat! So sweet and delicious!
Puree the strawberries in a food processor or blender until smooth. Set aside.
In dry popsicle molds, add a generous spoonful of vegan yogurt, followed by a spoonful of a fruit mixture, alternating between the two until the molds are completely full.
Insert the popsicle sticks, and place them in the freezer until they are completely frozen all the way through, at least 8 hours.
Notes
Enjoy in layers or blended: Either way, the creamy strawberry popsicles taste delicious.
For sugar-free popsicles: Use plain vegan yogurt with vanilla extract. Use a sugar alternative if preferred.
For very 'clean' layers: Spoon each layer in the popsicle, leaving 20-30 minutes to place them back in the freezer between each one so they don't blend together.
