15ouncesof white beans (any variety)drained and rinsed
¼ cupof finely diced red onion
¼ cupof chopped basilnot packaged
3tablespoonsof balsamic vinegar
2tablespoonsof olive oiloptional
Salt and freshly ground pepperto taste
Instructions
In a large bowl, combine the tomatoes, cucumber, beans, onion, basil, balsamic vinegar, olive oil, salt, and pepper until evenly coated.
Eat immediately or keep stored in the refrigerator in an airtight container for up to 5 days.
